Evolution Fresh stores will hve eight juices on tap -- and frozen fruit available -- that can be combined into any combination of juices and smoothies. The store also serves salads, sandwiches and wraps, breakfasts, including oatmeal and scrambled egg dishes, and small batch soups. || Ha! Starbucks misspelled vegetables ("vegatables") at its first Evolution bar.

This is just plain silly but doesn't surprise me with that Bellevue crowd. I used to live in Issy and worked East Side, I'm not surprised at all the caffeine addicts there want to balance out their habit with "something healthy."
But for me, this has no place in Starbucks, the best coffee place ; )

A fellow partner and I made the journey to Bellevue to check it out. It was....ok. Expensive, but ok. I can see where it could appeal to the Bellevue crowd. They offer delivery with a minimum order amount, the food wasn't too bad. My Friend and I ordered smoothies and soup. The Carrot Ginger soup was ok, but Tomato soup was more the consistency of Marinara. The salads, sandwiches and veggies bowls looked pretty good though.
I really do think they need to come down in price on the smoothies....
